I made this bowl for the first time on a night I really wanted steak but didn’t want anything heavy.

Grilled zucchini, blistered cherry tomatoes, a big scoop of hummus, and seared steak bites over rice.

It hit every note I was craving. Rich, fresh, a little smoky, and still light enough that I didn’t feel weighed down after.

This bowl looks like something from a restaurant menu, but it’s really just a handful of simple components cooked well. Seared steak, grilled veggies, creamy hummus, and warm rice, all layered together in one bowl.

Why This One Works

The steak gets a hard sear, so you get that deep charred flavor on the outside while the inside stays tender.

The grilled zucchini and blistered tomatoes add a smoky sweetness that balances the richness of the meat.

What You’ll Need

For the steak:

  • 1.5 pounds flank steak or sirloin, cut into bite sized pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

For the vegetables:

  • 1 zucchini, sliced into rounds
  • 1.5 cups cherry tomatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped

For the bowl:

  • 2 cups cooked white or jasmine rice
  • 1 cup hummus
  • Fresh parsley or basil, for topping
  • A drizzle of olive oil
  • A squeeze of lemon juice

How to Make It

Start with the steak. Toss the bite sized pieces in a bowl with olive oil, garlic, smoked paprika, salt, and pepper. Let it sit for about ten minutes while you prep everything else.

Heat a large pan or grill pan over high heat until it’s really hot. Add the steak in a single layer, giving each piece some room so it sears instead of steams.

Cook for two to three minutes per side for a good char with a pink center, or longer if you prefer it more well done.

While the steak rests, cook your vegetables. Toss the zucchini slices and cherry tomatoes with olive oil, salt, and pepper.

Grill or pan sear the zucchini for two to three minutes per side until you get good grill marks.

Add the tomatoes to the same pan for the last few minutes, just until they blister and start to burst.

Putting the Bowl Together

Start with a base of warm rice in each bowl. Add the seared steak to one side. Arrange the grilled zucchini and blistered tomatoes around the rest of the bowl.

Add a generous scoop of hummus right in the middle. Finish with a drizzle of olive oil, a squeeze of lemon juice, and a sprinkle of fresh herbs on top.

A Few Tips

Let your steak rest for a few minutes after cooking before adding it to the bowl. This keeps all the juices in the meat instead of running out onto your cutting board.

If you’re meal prepping, keep the hummus in a separate container so it doesn’t get watery sitting against the warm rice and steak.

Everything else holds up well together in the fridge for three to four days.

You can swap the hummus for tzatziki if you want something cooler and creamier instead, or add crumbled feta on top for extra flavor.
